BANANA - HERB CASSEROLE
3 lg. bananas, green tipped
1/4 cup butter
1/4 cup chicken stock or bouillon
1/2-cup stuffing or bread crumbs
1/2-tsp. rosemary
1/2-tsp. marjoram
3 Tbls. slivered almonds
Preheat oven to 325°F.
Prepare bananas and slice into thick slices.
In a small skillet, heat the butter then add the sliced bananas and saute. Add the chicken stock and the stuffing. If stuffing is too dry, add a little more chicken stock to moisten. Add the rosemary and marjoram to the mixture and blend well.
Grease a casserole dish and spoon the banana mixture in.
Sprinkle the slivered almonds over the top.
Bake 20 minutes.
Serve hot.
