SPICY BANANA TOAST
4 sm. bananas, well ripened
6 slices bread 1 Tbls. sugar
1 tsp. lemon juice 1 Tbls. butter
1/2-tsp. salt 1/2-tsp. cayenne pepper (or to taste)
Preheat oven to 425°F.
Cut off both tips of bananas and peel. Cut into chunks which makes it easier to handle.
In a small mixing bowl, mash bananas, salt, butter, lemon juice, cayenne pepper and sugar together.
Toast slices of bread, then spread banana mixture on the toast. Place slices of bread on baking sheet and place in oven for 5 minutes or place under broiler for a most crisp toast.
Serve hot.
Serves 4
Variation: If desired, after the banana mixture is spread on toast, you may not wish to place in the oven. Serve as is.
