BANANAS AND RICE
3 lg. bananas, green tipped
1 lg. onion, peeled and sliced
2 Tbls. butter or margarine
1 cup uncooked brown rice
salt and pepper to taste
2 hard-boiled eggs
Prepare the rice according to package directions.
While rice is completing the cooking stage, saute the onion in the butter until well browned.
Meanwhile, peel bananas and cut off both tips. Dice bananas. Add bananas to the onions and continue sauteing until bananas are lightly browned, adding more butter, if needed, but keep it sizzling.
Arrange the hot, cooked rice on a serving dish. Slice the hard-boiled eggs and arrange over the top of rice. Spoon banana mixture over the top of eggs and sprinkle with salt and pepper to taste.
Serve while hot as a meat accompaniment.
